Shrimp And Pasta Creole

Recipe Ingredients

1/2 lb 227g / 8ozShrimp - medium, shelled
2 tablespoons 30mlButter or margarine
1/2 cup 118mlHeavy cream
1/4 cup 59mlClam juice
1/4 cup 15g / 0.5ozGreen onions - finely chopped
1 tablespoon 15mlBrandy
1 tablespoon 15mlOrange rind - grated
1/2 teaspoon 2.5mlTarragon - dried
1/2 lb 227g / 8ozCrawfish tails - peeled/cooked
8 oz 227gSmall pasta shells/spirals
1/4 cup 59mlLouisiana coffee - w/chicory

Recipe Instructions

1. In large skillet, cook shrimp in melted butter over medium-high heat 4 minutes, stirring frequently.

2. With slotted spoon, remove shrimp; set aside.

3. Put cream, clam juice, green onions, brandy, orange peel, and tarragon in skillet; stir over high heat until sauce is thickened.

4. Stir in crawfish, shrimp, pasta and brewed coffee; heat through.
