| 3 cups | 480g / 16oz | Cooked rice - cooled |
| 1/2 cup | 31g / 1.1oz | Minced onions |
| 1/2 cup | 46g / 1.6oz | Minced sweet pickles |
| 1 1/2 cups | 165g / 5.8oz | Thinly sliced celery |
| 1/4 cup | 36g / 1.3oz | Diced pimiento |
| 3 | Hard-cooked eggs - chopped | |
| 1 tablespoon | 15ml | Lemon juice |
| 1 cup | 237ml | Mayonnaise |
| Crisp salad greens | ||
| Tomato wedges - (optional) |
1. Combine all ingredients except greens and tomato wedges; season to taste and chill.
2. Serve on salad greens; garnish with tomato wedges if desired.
