Pepper Jelly Recipe - Cooking Index
3/4 cup | 177ml | Bell peppers - ground |
1/4 cup | 59ml | Hot peppers - ground |
1 1/2 cups | 355ml | White vinegar |
6 cups | 1188g / 41oz | Sugar |
1 cup | 237ml | Liquid fruit pectin |
1. Combine peppers, vinegar and sugar.
2. Bring to a hard boil; boil 1 minute, then add liquid fruit pectin and few drops green food coloring.
3. Return to a boil; boil 1 minute.
4. Pour into hot sterilized jars; seal with paraffin.
NOTE: A few drops hot pepper sauce can be added to jelly during cooking for a even zippier version.
