Okra Pilau Recipe - Cooking Index
2 cups | 474ml | Okra - thinly sliced, rinsed |
3 | Bacon slices - diced | |
1 cup | 146g / 5.1oz | Green bell pepper - chopped |
1 cup | 62g / 2.2oz | Onions - chopped |
1 cup | 160g / 5.6oz | Rice - uncooked |
2 cups | 474ml | Chicken broth |
2 teaspoons | 10ml | Salt |
1 | Tomatoes - drain/chop(16oz) |
1. In large skillet, saute okra and bacon until lightly browned.
2. Add bell peppers and onions; continue cooking until vegetables are crisp-tender.
3. Add rice, chicken broth and salt.
4. Bring to a boil, stir once, cover, reduce heat and simmer 15 minutes, or until rice is tender and liquid is absorbed.
5. Add tomatoes; heat, and fluff with a fork.
