Meatballs Con Queso Recipe - Cooking Index
1 1/2 lbs | 681g / 24oz | Ground beef |
1 1/2 cups | 219g / 7.7oz | Bread crumbs |
1/3 cup | 20g / 0.7oz | Onion - chopped |
1/3 cup | 78ml | Milk |
3 tablespoons | 45ml | Parsley - chopped |
1/4 teaspoon | 1.3ml | Pepper |
1 | Egg | |
3 tablespoons | 45ml | Salad oil |
16 oz | 454g | Velveeta cheese |
4 oz | 113g | Green chiles - chopped |
1 | Taco seasoning mix | |

Mix first 7 ingredients and shape into 1" balls. Fry in oil. Remove cooked meatballs from skillet, in same skillet, on low heat, stir in chiles, cheese, taco seasoning and 3/4 cup water. Simmer until cheese is melted, stirring constantly.
Return meatballs to mixture in skillet cover and simmer until completely heated throughout. Serve immediately with hot corn bread. A mouth watering, tummy-warming delight.
