Marinated Black-Eyed Peas Recipe - Cooking Index
| 1/2 cup | 118ml | Olive oil |
| 1/4 cup | 59ml | Red wine vinegar |
| 1 teaspoon | 5ml | Salt |
| 1/4 teaspoon | 1.3ml | Pepper |
| 1 | Garlic - crushed | |
| 1 cup | 110g / 3.9oz | Celery - chopped |
| 1/2 cup | 31g / 1.1oz | Red onion - chopped |
| 1/2 cup | 73g / 2.6oz | Green bell pepper - chopped |
| 1 | Jalapeno pepper - chopped | |
| 30 oz | 852g | Black-eyed peas, drained - 2cn |
Mix the oil, vinegar, salt, pepper, and garlic then pour the mixture over the remaining ingredients in a large bowl. Cover and refrigerate at least 2 hours but no longer than 24 hours, stirring occasionally.
