Dirty Rice (Baked Rice Dressing) Recipe - Cooking Index
1/2 lb | 227g / 8oz | Ground lean pork |
1/2 cup | 31g / 1.1oz | Ground chicken gizzards |
1 cup | 160g / 5.6oz | Raw rice |
1 | Onion soup | |
1 | Cream of mushroom soup | |
1 cup | 62g / 2.2oz | Chopped green onion tops - (scallions) |
1/3 cup | 36g / 1.3oz | Celery chopped fine |
1 cup | 93g / 3.3oz | Parsley - minced |
1/3 cup | 20g / 0.7oz | Finely chopped onions |
1/3 cup | 48g / 1.7oz | Chopped green bell pepper |
Red and black pepper to taste |
Mix ground meat with the raw rice. Add onion, bell pepper, celery, onion tops and parsley. Mix the soups and season with red and black pepper.
Put into a heavy casserole dish and cover with close-fitting cover in order to retain all the juice.
Bake at 325F for 2 hours.
