1/2 cup | 99g / 3.5oz | Butter or margarine |
1 | Onion - large, minced | |
1/2 | Green bell pepper - diced | |
1 | Okra - fresh, sliced/rinsed | |
4 | Tomatoes - fresh, coarsely | |
Chopped | ||
Salt to taste | ||
Black pepper to taste |
1. Melt butter in large skillet; add onion and saute over medium heat until soft.
2. Add bell pepper, okra and tomatoes; season to taste.
3. Reduce heat; cover and simmer 20 minutes, stirring occasionally.
NOTE: If desired, add fresh corn kernels.
Makes a terrific fresh-tasting vegetable medley.
