Creole Corn Muffins

Recipe Ingredients

2   Eggs - beaten
1 1/2 cups 355mlMilk
3/4 cup 148g / 5.2ozVegetable shortening - melted
2 tablespoons 30mlBell pepper - chopped
2 tablespoons 30mlOnion - chopped
2 tablespoons 30mlPimiento - chopped
3/4 cup 109g / 3.8ozAmerican cheese - grated
3/4 cup 177mlCheddar cheese - milk, grated
2 1/2 cups 156g / 5.5ozFlour - all-purpose
1 teaspoon 5mlSalt
2 tablespoons 30mlBaking powder
2 tablespoons 30mlSugar
2 tablespoons 30mlCornmeal

Recipe Instructions

1. Mix eggs, milk and shortening.

2. In another bowl, combine remaining ingredients.

3. Add milk mixture and stir just to mix (there will be lumps).

4. Pour into greased muffin cups and bake in preheated 400F oven 25 to 30 minutes, or until done.
