Crawfish Au Gratin

Recipe Ingredients

1/2 lb 227g / 8ozGreen onions - chopped
3   Celery ribs - chopped
1/2 lb 227g / 8ozButter
4 tablespoons 60mlFlour
1   Evaporated milk
1   Evaporated milk
2 lbs 908g / 32ozCrawfish tails
2   Egg yolks
2 tablespoons 30mlSherry
  Salt and pepper - to taste
10 oz 284gYellow cheese - grated
1/2 cup 73g / 2.6ozParmesan cheese

Recipe Instructions

Saute onions and celery in butter until soft. Add flour and blend. Add milk. Remove from heat and add remaining ingredients except cheese.

Pour into casserole dish. Top with yellow cheese and sprinkle Parmesan cheese over top. Bake at 350F for 15 minutes or until done.
