Bananas Foster

Recipe Ingredients

1/2 cup 80g / 2.8ozFirmly packed brown sugar
1/4 cup 49g / 1.7ozButter - (not margarine)
4   Ripe bananas - peeled and quartered
1   Cinnamon
1/2 cup 118mlLight rum - (dark will do if it's all you have, just darker)
1/4 cup 59mlBanana liqueur
1   Good vanilla ice cream - (like Haagen Dazs)

Recipe Instructions

Melt brown sugar and butter in a chafing dish or skillet, stirring often.

Add bananas and saute just until soft. (DON'T OVERCOOK.) Heat rum and banana liqueur in a small saucepan.

Pour over bananas, but DO NOT STIR into liquid.

CAREFULLY light liquor in chafing dish and keep spooning sauce over bananas until flames die. Scoop ice cream into 4 large dessert dishes (large brandy snifters look beautiful if for company).

Spoon bananas and sauce over and serve immediately. From Michelle Bass Serves 4
