Bananas Foster Recipe - Cooking Index
1/2 cup | 80g / 2.8oz | Firmly packed brown sugar |
1/4 cup | 49g / 1.7oz | Butter - (not margarine) |
4 | Ripe bananas - peeled and quartered | |
1 | Cinnamon | |
1/2 cup | 118ml | Light rum - (dark will do if it's all you have, just darker) |
1/4 cup | 59ml | Banana liqueur |
1 | Good vanilla ice cream - (like Haagen Dazs) |
Melt brown sugar and butter in a chafing dish or skillet, stirring often.
Add bananas and saute just until soft. (DON'T OVERCOOK.) Heat rum and banana liqueur in a small saucepan.
Pour over bananas, but DO NOT STIR into liquid.
CAREFULLY light liquor in chafing dish and keep spooning sauce over bananas until flames die. Scoop ice cream into 4 large dessert dishes (large brandy snifters look beautiful if for company).
Spoon bananas and sauce over and serve immediately. From Michelle Bass Serves 4
