Jalapeno Cheese Grits

Recipe Ingredients

2 cups 474mlChicken stock
2 cups 474mlWater
1 cup 237mlGarlic clove (small)
1 cup 237mlQuick-cooking hominy grits - not instant
1 cup 146g / 5.1ozGrated cheddar cheese
1   Seeded and minced jalapeno peppers - (1 to 2) or to taste
  Salt - to taste

Recipe Instructions

Place chicken stock and water in a medium saucepan over high heat. Bring to a boil. Stir in garlic and grits. Reduce heat and simmer, stirring frequently, for about 10 to 15 minutes or until thickened.

Remove from heat and stir in jalapenos and cheese until completely melted. Season to taste with salt and keep warm.

Yield: 6 servings
