Peppered-London Broil With Lime-Marinated Onions Recipe - Cooking Index

1 lb | 454g / 16oz | London broil - about 1 inch t |
1/4 cup | 59ml | Fresh-ground black pepper - 1 |
1 tablespoon | 15ml | Salt |
1 tablespoon | 15ml | Flour |
In a small non-reactive bowl, combine onions, lime juice and Tabasco; cover and refrigerate for at least 2 hours but less than 6. Rub meat all over with pepper and salt.
Sprinkle half the flour on each side of the meat. Saute over high heat in a large saute pan, with no o until well seared, 5 to 7 minutes on each side for rare.
Remove from heat and serve in thickish slices, topped with generous portion of the marinated onions.
