Individual Hamburger Casseroles

Recipe Ingredients

1 lb 454g / 16ozGround beef or ground pork
1/2 cup 31g / 1.1ozChopped onion
1 1/2 cups 219g / 7.7ozSoft bread crumbs - 2 slices
3/4 teaspoon 3.8mlSalt
1/2 teaspoon 2.5mlDried thyme - crushed
1/8 teaspoon 0.6mlPepper
3 tablespoons 45mlMargarine or butter
1/4 cup 15g / 0.5ozAll-purpose flour
1/2 teaspoon 2.5mlSalt
2 cups 474mlReconstituted nonfat milk or milk
1/2 cup 73g / 2.6ozShredded American cheese or process cheese
2 cups 292g / 10ozCooked vegetables *broccoli*cauliflower*
2 tablespoons 30mlMargarine or butter - melted

Recipe Instructions

In skillet cook ground beef or pork and onion until meat is browned; drain off fat. Stir in 1/2 cup of the soft bread crumbs, the 3/4 teaspoon salt, the thyme, and pepper.

In saucepan melt the 3 tablespoons margarine or butter; blend in flour and the 1/2 teaspoon salt. Add milk all at once. Cook and stir until thickened and bubbly. Add cheese, stirring until melted. Stir in meat mixture and cooked vegetables.

Turn meat-vegetable mixture into six 1 cup individual casseroles. (If desired, cover and refrigerate casseroles up to 24 hours.) Combine remaining bread crumbs with the 2 tablespoons melted margarine or butter. Sprinkle atop casseroles just before baking.

Bake in 350F oven about 20 minutes or until heated through. (Bake about 35 minutes if chilled.)
