4 | Anaheim chile pepper - roasted, peeled, chopped | |
3 | Jalapeno peppers - roasted (to taste), peeled, | |
1 1/2 lbs | 681g / 24oz | Lean pork - cubed |
1/2 lb | 227g / 8oz | Onion - chopped (large) |
2 | Garlic - minced | |
3 | Chicken broth | |
1 teaspoon | 5ml | Ground cumin |
1/2 teaspoon | 2.5ml | Chile powder |
1 | Cayenne pepper - (to taste) | |
4 tablespoons | 60ml | Flour |
Salt and pepper to taste | ||

Roast, peel and chop peppers. Cube lean pork. Saute pork in oil. Remove. Saute onion. Remove. Add flour to oil and make a gravy by adding the chicken broth. Add all ingredients in gravy, Cover and simmer for 2 hours until meat is tender. The green chile can be put in a crock pot and simmer for 4 to 6 hours.
NOTES : Fresh roasted chiles is a must in this recipe. The green chile is great poured over homemade tamales.
