Recipe Ingredients

2 lbs 908g / 32ozDried red beans
6 cups 1422mlWater
2 cups 125g / 4.4ozOnions - chopped (large)
4   Garlic - minced
1   Green bell pepper - chopped (large)
1   Red bell pepper - chopped (large)
1/2 lb 227g / 8ozSalt pork
1 cup 237mlDry red wine - (optional)
1/2 cup 73g / 2.6ozChopped fresh parsley
1 tablespoon 15mlChopped fresh oregano
1 tablespoon 15mlOld bay seasoning
3   Bay leaves
1 teaspoon 5mlCelery seeds
1 teaspoon 5mlSalt
1 teaspoon 5mlBlack pepper
1 teaspoon 5mlPaprika
1 teaspoon 5mlDried crushed red pepper
1 teaspoon 5mlTabasco (or other hot sauce) - to taste
1 lb 454g / 16ozSmoked beef sausage - 1/2 inch pieces
1 lb 454g / 16ozAndouille - 1/2 inch pieces
2 lbs 908g / 32ozTomatoes - diced (medium)
1   Green chilies (Anaheim type) - diced, undrained
1 tablespoon 15mlGumbo file'
  Hot cooked rice

Recipe Instructions

Sort and wash beans. Soak, if desired. Combine beans and next 18 ingredients in large Dutch oven; bring to a boil.

Cover, reduce heat, and simmer 3 hours or until thickened and beans are tender.

Add sausages and tomatoes; cook 30 minutes. Remove and discard salt pork and bay leaves; stir in file' seasoning.

Serve over rice.
