James Barber's Pepper Pitas And Hummus Recipe - Cooking Index
14 oz | 397g | Chickpeas - canned, drained, rinsed |
3 | Garlic - minced | |
4 tablespoons | 60ml | Peanut butter |
1 | Lemon - juice of | |
6 tablespoons | 90ml | Yogurt |
Pepper pitas | ||
8 | Pita bread | |
4 tablespoons | 60ml | Olive oil |
1 | Salt | |
2 tablespoons | 30ml | Pepper |
2 tablespoons | 30ml | Parsley |
Combine all of the ingredients in a food processor and blend until smooth. If too thick add a little water, lemon juice or yogurt.
Makes 2 cups Pepper Pitas
Preheat oven to 400F.
Cut pitas into quarters.
Brush with the oil and sprinkle with salt, pepper and parsley. Bake until crisp, about 5 minutes. Makes 32 pitas
