Butter Beans With Mint And Tomatoes Recipe - Cooking Index
1 lb | 454g / 16oz | Butter beans - cooked |
2 | Garlic - crushed | |
14 oz | 397g | Canned tomatoes |
3 oz | 85g | Onions - finely chopped (large) |
1/4 | Vegetable stock - condensed | |
2 tablespoons | 30ml | Fresh mint |
OR 1 tbs dry mint |
Saute onions and garlic in a little of the stock until starting to soften.
Add the tomatoes and the cooked beans and the mint. Season to taste.
Simmer gently, covered, for about 20 minutes to allow the flavors to blend.
