Recipe Ingredients

1 cup 110g / 3.9ozChopped carrots
1 cup 146g / 5.1ozChopped red or green bell - pepper
1 cup 62g / 2.2ozChopped onion
3 cups 279g / 9.8ozGarlic cloves - minced (large)
1 tablespoon 15mlChili powder
2 teaspoons 10mlGround cumin
1   Italian plum - tomatoes with juice,
1   Red kidney beans - drained
1   Cannellini - beans, drained
1   Black beans - drained
2 tablespoons 30mlCanned chopped chipotle - chilies in adobo sauce

Recipe Instructions

You guys can figure out the rest. Cook for 30 minutes, stirring, and add salt and pepper.

I omitted 1 tbs oil at the beginning of this recipe- it was used to saute the vegetables.
