2 cups | 320g / 11oz | Cooked or canned black beans - -(rinse and drained |
2 cups | 320g / 11oz | Cooked rice |
1 1/2 cups | 24g / 0.8oz | Fresh cilantro |
1/4 cup | 59ml | Lime juice |
3/4 cup | 177ml | Oil |
1/2 cup | 31g / 1.1oz | Chopped onion |
2 | Garlic cloves - crushed | |
Salt | ||
Freshly ground black pepper |
Mix the beans, rice, and cilantro together in a bowl.
Place the lime juice in a small bowl and whisk in the oil.
Add the onion and garlic and toss with the rice and beans.
Add salt and pepper to taste.
