6 | Tuna steaks - fresh - (3/4" (large) thick) | |

4 | Tomatoes - peeled and seeded (medium) | |
2 | Garlic cloves - minced | |
1 cup | 237ml | Dry white wine |

1/3 cup | 78ml | Olive oil |
Salt and pepper - to taste |
Preheat oven to 400F.
Fry unwashed tuna steaks in 1/3 cup very hot olive oil. Salt and pepper steaks liberally while frying. When browned on both sides, put in a baking dish. Pour in white wine until it reaches the middle of the steaks (about 1 cup).
Reheat the oil in which you browned the tuna. Slowly fry the chopped onion until golden with thyme branch. Add minced garlic cloves. When garlic is beginning to take on color, put in tomatoes, peeled, seeded and cut into quarters. Salt to taste. Mix in sugar. When tomatoes are barely cooked, pour sauce over tuna.
Bake in 400F oven for 1 hour, basting with sauce during baking.
