Here is the flan recipe from the Vita Mix book. I'm going to give is exactly as written. Don't be fooled by the simplicity, this is the best flan I have ever tasted.
Preheat oven to 350F. Set aside n 8 or 9 inch baking dish.
Place ingredients in Vita Mix container. Clamp action dome in place. Turn black speed control knob to high. Left red impact lever up to on position and allow machine to run 2 minutes.
Pour into baking dish and bake 30 to 40 minutes. Makes 6 servings.
If you don't have a Vita Mix I can't tell you what to do. You might whip together all the ingredients except the caramels, and melt the caramels and blend them into the whipped mixture.
I don't know whether an ordinary food processor or blender can handle the caramels.
When I told my wife I posted this recipe she informed me that I needed to add the part about making syrup. That's not in the vitamix recipe, because that's a recipe for baked custard, and you need syrup for flan.
you make the syrup by melting about 1/2 cup sugar (Maria, my wife, is pretty vague on the exact amount of sugar, she says you just have to look at the pan and estimate--good luck) until it begins to caramelize, medium brown is how she puts it.
after the sugar is melted as required you pour the custard mixture in and bake it about 30 minutes. Because the flan is so good, Maria usually doubles the recipe in which case she bakes it for 40 minutes.
She says leave it in the fridge overnight so it's nice and firm.
