Tomato-Garlic Sauce

Recipe Ingredients

6 cups 375g / 13ozTomatoes - very ripe - peeled, (large) seeded and chopped
  (or 3 to 4 cups canned tomatoes)
4   Garlic cloves - minced (large)
1/3 cup 78mlOlive oil
  Salt and pepper - to taste

Recipe Instructions

Heat olive oil to the verge of smoking in a skillet. Fry the minced garlic cloves until browned. Add chopped, seeded tomatoes, season with salt and pepper, and cook until all liquid has evaporated and sauce has thickened.

This recipe makes 3 to 3 1/2 cups of sauce.

Hint: If tomatoes are not sweet, add a pinch of sugar to the sauce.
