Tomato-Garlic Sauce Recipe - Cooking Index
6 cups | 375g / 13oz | Tomatoes - very ripe - peeled, (large) seeded and chopped |
(or 3 to 4 cups canned tomatoes) | ||
4 | Garlic cloves - minced (large) | |
1/3 cup | 78ml | Olive oil |
Salt and pepper - to taste |
Heat olive oil to the verge of smoking in a skillet. Fry the minced garlic cloves until browned. Add chopped, seeded tomatoes, season with salt and pepper, and cook until all liquid has evaporated and sauce has thickened.
This recipe makes 3 to 3 1/2 cups of sauce.
Hint: If tomatoes are not sweet, add a pinch of sugar to the sauce.
