Spinach With Raisins And Pine Nuts Recipe - Cooking Index
2 cups | 474ml | Cooked spinach |
(2 lbs fresh or 2 pkgs frozen spinach) | ||
1/2 cup | 80g / 2.8oz | Seedless raisins |
1/4 cup | 59ml | Pine nuts - peeled |
2 tablespoons | 30ml | Olive oil |
Salt and pepper - to taste |
Drain cooked spinach thoroughly and chop coarsely. Heat olive oil in skillet.
Fry resins and pine nuts until the latter are golden.
Add spinach, season with salt and pepper, toss constantly while frying for 2 minutes, then serve.
