Poor Man's Lobster - (Langosta Del Pobre) - 1

Although the recipe calls for a fairly large amount of garlic, the garlic flavor is not pronounced.

Recipe Ingredients

2 lbs 908g / 32ozAny white fish - tail part - see * note
5   Garlic cloves
1   Bay leaf
3   Carrots - sliced (medium)
2 tablespoons 30mlPaprika
2 tablespoons 30mlOlive oil

Recipe Instructions

* Note: This dish can be made with the tail part of any firm white fish. Ask to have the piece skinned, boned, and tied with a string like a small roast. Save the spiny piece to enrich the sauce.

Wash and dry fish. Mash garlic cloves and anoint fish with the mashed garlic and olive oil. Roll it in paprika. Put it in an earthenware casserole with bay leaf and sliced carrots. Let it cook slowly, covered, approximately 30 minutes or until cooked through. Remove fish to warmed serving dish and untie string. Force sauce through a sieve and pour over fish.

The string will leave white marks on the pink-surfaced fish and will contribute to its resemblance to lobster.
