1 1/4 cups | 116g / 4.1oz | Almonds - raw scalded |
4 | Bread - white part only | |
(soaked in wine vinegar and squeezed) | ||
2 | Garlic cloves - peeled (medium) | |
4 cups | 948ml | Ice water |
2/3 cup | 157ml | Olive oil |
32 | White grapes - peeled |
Using a mortar, pound almonds with garlic and bread, gradually add olive oil, strain, and stir in ice water. Serve very cold with seven or eight peeled white grapes in each soup plate.
If you use an electric blender, mix all ingredients except grapes simultaneously until almonds are ground as fine as possible; strain and serve as described above.
