Provincale-Style Pasta Sauce Recipe - Cooking Index
2 cups | 125g / 4.4oz | Diced tomatoes |
1/2 cup | 118ml | Roasted red bell peppers - |
Diced | ||
1/4 cup | 59ml | Olive oil |
1 tablespoon | 15ml | Olive oil |
1/4 cup | 36g / 1.3oz | Chopped fresh parsley |
8 | Olives - kalamata, Italian | |
2 teaspoons | 10ml | Fresh thyme or 1/2 tsp dried |
2 | Garlic - minced | |
1 teaspoon | 5ml | Capers - drained |
Combine all ingredients in a large bowl. Season to taste with salt and pepper.
Makes about 3 cups. Serve with penne, ziti or other tubular pasta.
Recipe makes enough sauce for about 8 oz. pasta (dry weight).
For good eating sprinkle with grated parmesan cheese before serving.
