Provincale-Style Pasta Sauce

Recipe Ingredients

2 cups 125g / 4.4ozDiced tomatoes
1/2 cup 118mlRoasted red bell peppers -
  Diced
1/4 cup 59mlOlive oil
1 tablespoon 15mlOlive oil
1/4 cup 36g / 1.3ozChopped fresh parsley
8   Olives - kalamata, Italian
2 teaspoons 10mlFresh thyme or 1/2 tsp dried
2   Garlic - minced
1 teaspoon 5mlCapers - drained

Recipe Instructions

Combine all ingredients in a large bowl. Season to taste with salt and pepper.

Makes about 3 cups. Serve with penne, ziti or other tubular pasta.

Recipe makes enough sauce for about 8 oz. pasta (dry weight).

For good eating sprinkle with grated parmesan cheese before serving.
