1/4 cup | 59ml | Olive oil |
2 tablespoons | 30ml | Lime juice |
1 cup | 146g / 5.1oz | Cotija or parmesan cheese |

Red chile pepper |
Husk and wash tomatillos. Slice thinly and arrange on a platter or 4 salad plates. Combine oil and lime juice, sprinkle over tomatillos and top with cheese. Makes 4 servings.
