1 tablespoon | 15ml | Fresh oregano |
1 | Jalapeno | |
4 | Garlic | |
1/2 cup | 118ml | Ex-virgin olive oil |
4 tablespoons | 60ml | Balsamic |
1/2 lb | 227g / 8oz | Low-fat goat cheese |
1 cup | 237ml | Cucumbers - rough chop |
2 lbs | 908g / 32oz | Plum tomatoes |
Salt and pepper | ||
1 | Tabasco |
Put 1/2 of cheese and all ingredients except tomatoes in processor.
Puree. Add tomatoes and process until toms are chunky. Add cheese and serve over pasta.
