Hot Fudge Sauce Recipe - Cooking Index
1/3 cup | 78ml | Water |
1 cup | 328g / 11oz | Light corn syrup |
1 1/3 cups | 263g / 9.3oz | Sugar |
1/4 teaspoon | 1.3ml | Salt |
2 1/2 oz | 71g | Unsweetened chocolate - coarsely chopped |
1/3 cup | 36g / 1.3oz | Cocoa powder |
1 | Unsalted butter | |
1/3 cup | 78ml | Heavy cream |
1 tablespoon | 15ml | Vanilla extract |
Combine water, corn syrup and sugar in a non-reactive pan and bring to a boil, stirring often, until all the sugar crystals have melted.
Remove from heat and add the salt and the chocolate. Allow to stand 2 minutes, then whisk smooth. Sift the cocoa into a mixing bowl and stir in enough of the chocolate syrup mixture to make a paste. Stir the cocoa paste smoothly into the syrup mixture.
Whisk in the remaining ingredients. Store the sauce in a tightly covered jar in the refrigerator. Reheat over simmering water before serving.
