Gribiche Sauce

Serves: 3 people

Recipe Ingredients

2 tablespoons 30mlDijon mustard
1/2 cup 118mlRed wine vinegar
2 cups 474mlSalad oil
2 tablespoons 30mlShallots - finely chopped
2 tablespoons 30mlChives - finely chopped
2 tablespoons 30mlParsley - finely chopped
4   Cornichons - finely chopped
2 tablespoons 30mlCapers
2   Eggs - hard boiled; peeled, and finely chopped

Recipe Instructions

Gribiche Sauce: In a medium bowl place the Dijon mustard and the red wine vinegar.

Whisk them together so that they are well blended.

While whisking constantly, slowly dribble in the oil.

Add the remainder of the ingredients and whisk them in.
