Green Olive Pesto

Recipe Ingredients

1 1/2 cups 355mlLarge or jumbo green olives - pitted
  (such as ascolane)
1/2   Red onion - finely chopped
1/4 cup 59mlPine nuts
1   Garlic clove - thinly sliced
1/2 cup 118mlExtra-virgin olive oil - more or less

Recipe Instructions

In a food processor, combine olives, onion, pine nuts and garlic and blend 1 minute.

With motor running, slowly pour in olive oil until a thick, smooth paste is formed, texturally resembling rough bechamel.

Allow to stand 1/2 hour before using.

This recipe yields about 2 1/2 cups of pesto.
