Dipping Sauce - 2

Recipe Ingredients

1/2 cup 55g / 1.9ozWhite sesame seeds
1/2 cup 118mlBasic dashi - see recipe
  (1/2 to 1)
1/4 cup 59mlDark soy sauce - (1/4 to 1/2)
2 tablespoons 30mlMirin
1 tablespoon 15mlSugar
1 tablespoon 15mlSake
  Cayenne pepper - to taste

Recipe Instructions

Toast the sesame seeds in a heavy pan until lightly browned. Transfer warm seeds to a mortar and grind to a paste, or whirl in a blender.

Add the dashi, soy sauce, mirin, sugar and sake, and mix well, using a spatula to blend and smooth the sauce.

Add cayenne to taste. Pour sauce into individual cups.
