2 | Bacon slices - finely cut up | |
1/4 cup | 15g / 0.5oz | Onion - finely chopped, 1 sm |
3 cups | 187g / 6.6oz | Tomatoes - finely chopped |
1 cup | 237ml | Beef broth |
1/4 cup | 27g / 1oz | Carrot - finely chopped |
1/4 cup | 27g / 1oz | Celery - finely chopped |
1/4 cup | 4g / 0.1oz | Fresh cilantro - snipped |
1/2 teaspoon | 2.5ml | Salt |
1/4 teaspoon | 1.3ml | Pepper |
* You can make this sauce as hot as you want by adding up to a total of 4 dried Chipotle chiles.
Cover chiles with warm water. Let stand until softened, about 1 hour. Drain and finely chop.
Cook and stir bacon and onion in a 2-quart saucepan until bacon is crisp, stir in chiles and remaining ingredients.
Makes about 4 cups sauce.
