Chile Cream Sauce Recipe - Cooking Index
2 | Jalapeno chiles - seeded and chopped | |
2 tablespoons | 30ml | Minced onion |
1/2 cup | 118ml | Chicken stock |
1/2 cup | 118ml | Cream |
1 teaspoon | 5ml | Salt |
1/2 teaspoon | 2.5ml | Ground cumin |
1 tablespoon | 15ml | Butter |
This is creamy, hot and perfect to serve with noodles or grilled meats.
Place all ingredients except butter in a saucepan over medium heat and cook until reduced by about 1/2. Pour into a blender and puree. Replace the sauce in the saucepan, place over low heat and whisk in the butter.
Makes 1 1/2 Cups
