Basic Tomato Sauce Recipe - Cooking Index
1/2 cup | 118ml | Olive oil |
1 cup | 62g / 2.2oz | Onion - chopped (medium) |
2 | Garlic - minced | |
3 lbs | 1362g / 48oz | Ripe tomatoes |
Peeled - seeded, and reserve liquid | ||

32 oz | 909g | Plum tomatoes |
Chopped and reserve liquid | ||
2 tablespoons | 30ml | Minced fresh oregano |
Or | ||
1/2 tablespoon | 7.5ml | Dried oregano - crushed |
2 | Bay leaves | |
Salt and freshly ground pepper - to taste |
In a large skillet over medium-high heat, warm oil. Add onion and garlic and saute until translucent (about 5 minutes). Add tomatoes, oregano, and bay leaves; stir well.
Simmer, uncovered, over low heat until sauce is thick (about 1 hour). Stir occasionally to prevent sticking. Discard bay leaves and season to taste with salt and pepper. Force through a sieve to create a smooth consistency.
