Basic Pesto

Recipe Ingredients

2 cups 80g / 2.8ozBasil leaves - (tightly packed)
3   Garlic cloves
1/4 cup 59mlPine nuts
1/4 cup 49g / 1.7ozFreshly-grated parmigiano-reggiano
3 tablespoons 45mlFreshly-grated pecorino
1 cup 237mlLigurian olive oil
  Salt - to taste
  Freshly-ground black pepper - to taste

Recipe Instructions

In a food processor pulse basil leaves, garlic, pine nuts and cheeses until blended.

With motor running, pour olive oil in a thin stream until incorporated. Season with salt and pepper.
