Cubo De Res Con Chipotle (Cube Steaks With Chipotles)

Recipe Ingredients

2   Steaks
2   Tomato sauce
2   Water
1   Garlic - finely chopped
1/2   Onion - finely chopped (medium)
1   Oregano - (rubbed between palms)
1   Ground cumin
1   Canned chile chipotle - finely chopped
4 oz 113gCheese - grated (queso Oaxaca, cheddar, jack)
2 cups 474mlLettuce - grated
1/2 cup 73g / 2.6ozChopped olives
  Salt and ground black pepper to taste
4 tablespoons 60mlCooking oil

Recipe Instructions

Place 2 tablespoons oil in a frying pan, and brown the cube steaks well on both sides. Set aside.

In a warm saucepan, place the other 2 tablespoons oil. Add the onion and saute 1 minute. Add the garlic and saute until the onion is clear. Add the tomato sauce, water, chile, cumin, oregano, and chile chipotle, salt and pepper.

Simmer for 10 minutes, then add the cube steaks and simmer at least 10 minutes or longer. Place a steak on a plate with extra sauce poured over. Top with some grated cheese, lettuce, and chopped olives. This is very good with coastal style Mexican rice and fresh hot corn tortillas.

For those who like a little less picante, you can add just 1/2 canned chile chipotle.

This sauce is quick and easy, and is very flavorful. Boned sauteed chicken breasts would also work in this manner. For vegetarians, a garden burger would work well prepared in this manner.

I wanted to take a minute and post this recipe for a dish that is very easy to prepare and very tasty.

In the markets at the meat section, you can find a cut of meat called cube steak. Basically, I think they use round steak and run it through the tenderizer a few times, but you can use any similar cut of meat.
