2 cups | 320g / 11oz | Pinto beans - cooked |
2 tablespoons | 30ml | Onion - minced |
1/2 teaspoon | 2.5ml | Oregano |
1 | Green chiles - peeled, minced | |
4 tablespoons | 60ml | Parmesan cheese - grated |
Salt to taste | ||
1/4 lb | 113g / 4oz | Monterrey Jack - cheddar, or asadero cheese |
1 | Egg - beaten with one tablespoon water | |
Bread crumbs | ||
Oil for frying |
Combine the mashed beans, onion, oregano, chopped chiles, parmesan cheese and salt. Mix thoroughly and make into croquettes or patties, tucking a piece of cheese in the center, making sure the cheese is totally covered by the beans.
Dredge in the bread crumbs, dip in beaten egg, and repeat rolling in the crumbs.
Let them sit a few moments so the coating can set.
Meanwhile, heat a Dutch oven, heavy skillet, or deep fryer until oil is smoky hot. Fry patties or croquettes until golden brown. Drain on paper towels.
Makes 6-8 croquettes or patties.
Serve with fresh salsa.
I personally prefer patties because they cook more evenly and quicker.
