Satay Beef Marinade Recipe - Cooking Index
1 lb | 454g / 16oz | Beef - chilled and cut into thin pieces |
Marinade | ||
10 | Shallots | |
2 | Garlic | |
1/4 | Thumb-sized piece turmeric or | |
1/2 teaspoon | 2.5ml | Turmeric powder |
4 | Lemon grass - sliced | |
2 | Galangal (gingerroot) | |
2 tablespoons | 30ml | Coriander seeds |
2 teaspoons | 10ml | Cumin |
1 teaspoon | 5ml | Dark soy sauce |
1 teaspoon | 5ml | Salt |
5 tablespoons | 75ml | Sugar |
4 tablespoons | 60ml | Oil |
1. Combine marinade ingredients in blender and puree to a paste.
2. Rub paste mixture into the beef. Marinate beef for 1 hour.
3. Thread seasoned meat on to satay sticks or fine metal skewers.
4. Grill over charcoal fire or under hot grill. Baste with oil and water mixture to keep beef moist .
