Peanut Sauce - 1 Recipe - Cooking Index
1 cup | 198g / 7oz | Sugar |
1 | Bombay onion | |
1/2 cup | 118ml | Tamarind juice |
2 | Lemon grass - minced | |
3 tablespoons | 45ml | Chilies - pounded |
2/3 lb | 302g / 10oz | Peanuts - roasted |
1 | Gingerroot - minced | |
Salt to taste |
Grind the roasted peanuts.
In a saute pan, place the lemon grass, ginger, Bombay onion and stir fry until soft.
Add in ground chiles and the other ground ingredients add in tamarind juice and lastly peanuts, sugar and salt. Simmer until the gravy thickens.
To serve, arrange a few sticks of satay on a plate and serve with a bowl of peanut sauce, cucumber . Satay also goes very well with compressed rice.
