Chicken With Peanut Sauce

Recipe Ingredients

2 lbs 908g / 32ozChicken - cut up
1/2 teaspoon 2.5mlSalt
1 lb 454g / 16ozTomatoes - peeled
6 oz 170gPeanuts
1 oz 28gOnion - chopped (small)
1   Garlic
1/2   French roll or 1 (small)
1   White bread - browned in oil
4   Cloves
2 tablespoons 30mlLard or oil
  Salt and pepper to taste

Recipe Instructions

Half cover the chicken with salted water; cover and cook until tender.

Blend remaining ingredients, except lard or oil, and saute sauce, adding a little of the cooking liquid.

Stir until thick. Season to taste. Add the chicken and simmer only long enough for it to absorb the taste.

Note: Pork or veal may be substituted.
