Marinade | ||
1/4 cup | 59ml | Soy sauce |
2 tablespoons | 30ml | Lime juice |
1/2 cup | 99g / 3.5oz | Butter - melted |
1 teaspoon | 5ml | Ground coriander |
Peanut Sauce | ||
1 | Onion - sliced (small) | |
1 tablespoon | 15ml | Olive oil |
1/4 teaspoon | 1.3ml | Cayenne |
1 tablespoon | 15ml | Soy sauce |
1 teaspoon | 5ml | Sugar |
2 | Garlic - crushed | |
1 cup | 237ml | Dry roasted unsalted peanuts |
1/4 teaspoon | 1.3ml | Ground ginger |
2 tablespoons | 30ml | Lime juice |
Combine butter, 1/4 cup soy sauce, coriander, and 2 Tbsp lime juice. Marinate chicken in this while you make peanut sauce.
To make sauce: saute onion and garlic in oil until tender. Cool. Place in blender, add everything else, and blend carefully. Slowly and carefully add enough boiling water to form a thick paste. (Add more if you prefer a runny sauce.)
Now, broil or grill chicken until done, basting with marinade (about 5 minutes per side).
Serve with peanut sauce.
Serving Size : 6 as appetizers, 2 or 3 as main course
