Chicken Satay Marinade Recipe - Cooking Index
3 lbs | 1362g / 48oz | Chicken - deboned |
1 | Lemon grass - rough chopped | |
1 teaspoon | 5ml | Sugar |
1 teaspoon | 5ml | Cumin |
1 teaspoon | 5ml | Coriander |
1/2 teaspoon | 2.5ml | Powdered cinnamon |
1 teaspoon | 5ml | Turmeric |
8 | Shallots - diced | |
Salt to taste |
Cube the chicken meat, drain and put aside.
Grind coriander, cumin, turmeric, lemon grass, peanuts, salt and sugar.
Mix this with the powdered cinnamon, diced shallots and 1 tbs cooking oil, marinate the chicken with this mixture.
Using soaked bamboo skewers, thread meat on skewers.
Grill over medium coals. Turn over and continue grilling until the chicken is cooked.
Serve with peanut sauce.
