Chicken Satay - 4 Recipe - Cooking Index
2 lbs | 908g / 32oz | Chicken - skinned, boned, cubed |
Marinade | ||
1 tablespoon | 15ml | Ground coriander |
1/2 teaspoon | 2.5ml | Pepper |
3 tablespoons | 45ml | Lemon juice - up to 4 |
5 tablespoons | 75ml | Soy sauce |
6 tablespoons | 90ml | Peanut butter |
6 tablespoons | 90ml | Salad oil |
2 oz | 56g | Brown sugar |
2 | Garlic cloves - peeled | |
1 | Cayenne pepper |
Blend marinade ingredients together. Pour over chicken and let sit for 2 hours. Put pieces of meat on skewers and grill 3 minutes on each side.
An unusual marinade that everyone loves. Also makes a great hors d'oeuvre. Great for cookouts with a pasta salad.
If using wood skewers, soak skewers in water while chicken is marinating. This will prevent them from burning when on the grill.
