1 | Zucchini - (peeled) (small) | |
1 | Yellow squash - (peeled) (small) | |
1 | Carrot - (peeled) | |
2 | Tomatillos | |
1 | Tomato (medium) | |
1 | Garlic | |
3 | Serrano chiles | |
1/2 | Red onion (small) | |
1 tablespoon | 15ml | Finely chopped marjoram |
4 teaspoons | 20ml | Extra virgin olive oil |
1 tablespoon | 15ml | Unseasoned rice vinegar |
1 tablespoon | 15ml | Sugar |
1 | Salt to taste |
Finely dice all, mix and let sit for an hour before serving.
