Salsa Fria (Cooked)

Recipe Ingredients

1 tablespoon 15mlButter
2 cups 125g / 4.4ozFresh tomato. Peeled - chopped
1 teaspoon 5mlCumin
3/4 cup 109g / 3.8ozCrushed pineapple
1/4 cup 15g / 0.5ozOnion - diced
1/4 cup 59mlLime juice
1/2 cup 73g / 2.6ozHot pepper - diced
1/8 teaspoon 0.6mlCinnamon - ground
1   Tomatoes - chopped or (1lb.)
  Salt and pepper

Recipe Instructions

In saucepan, melt butter. Add the cumin, onion and hot pepper.

Sautee until the onion is translucent, 2-3 min. Add the tomatoes, pineapple, lime juice, and cinnamon.

Simmer for 30 min.

Season to taste with salt and pepper. Cool. Serve at room temp.

Exceptionally good with grilled fish.

Yield: Approx. 2 1/2 cups.
