Pear Salsa

Recipe Ingredients

2 tablespoons 30mlVegetable oil
1 tablespoon 15mlOnion - chopped (medium)
1   Green pepper - chopped fine
1   Garlic clove - chopped fine (large)
2 tablespoons 30mlFinely chopped parsley
1 tablespoon 15mlLemon juice
1/2 teaspoon 2.5mlSalt
1 tablespoon 15mlChopped fresh oregano or
1 teaspoon 5mlDried oregano
1 tablespoon 15mlChopped fresh basil or
1 teaspoon 5mlDried basil
1/2 teaspoon 2.5mlTabasco sauce
2 teaspoons 10mlTomatoes - seeded and chopped (medium)
  Coarse
2   Pears - peeled and chopped, up to 3

Recipe Instructions

Heat oil in medium fry pan. Sautee onion until tender, about 3 to 4 minutes. Add green pepper, garlic, parsley, lemon juice, salt, oregano, basil and Tabasco sauce; cook 2 minutes.

Remove fry pan from heat and stir in tomatoes and pears. Cover and refrigerate.

Makes 5 cups.
