1/2 | Onion - chopped | |
1/4 teaspoon | 1.3ml | Garlic - finely chopped |
1/4 teaspoon | 1.3ml | Fresh ginger - finely chopped |
1 | Lime - juiced | |
1 | Jalapeno - finely chopped | |
1 cup | 93g / 3.3oz | Fresh cranberries - chopped |
1 | Peaches | |
2 tablespoons | 30ml | Cilantro - chopped |
2 tablespoons | 30ml | Coconut - grated |
Sautee onion until opaque. Add garlic and sautee lightly. Add remaining ingredients and heat thoroughly.
NOTES : The colors in this salsa are great. Serve this over grilled chicken breasts but it is also good used as a condiment with any dinner.
