Recipe Ingredients

2   Chipotle chiles - *
2   Bacon slices - finely cut up
1/4 cup 15g / 0.5ozOnion - finely chopped, 1 sm
3 cups 187g / 6.6ozTomatoes - finely chopped
1 cup 237mlBeef broth
1/4 cup 27g / 1ozCarrot - finely chopped
1/4 cup 27g / 1ozCelery - finely chopped
1/4 cup 4g / 0.1ozFresh cilantro - snipped
1/2 teaspoon 2.5mlSalt
1/4 teaspoon 1.3mlPepper

Recipe Instructions

* You can make this sauce as hot as you want by adding up to a total of 4 dried Chipotle chiles.

Cover chiles with warm water. Let stand until softened, about 1 hour. Drain and finely chop. Cook and stir bacon and onion in a 2-quart saucepan until bacon is crisp, stir in chiles and remaining ingredients. Makes about 4 cups sauce.
